In last night's post, I mentioned my delicious dinner. Well, I (randomly) took pictures of it:

Fresh fruit salad, butternut squash risotto, baked chicken, steamed broccoli
with olive oil spread and lemon juice. |

This is the risotto--it is very, very good. |
Overall, it was a very healthy dinner, and satisfying. Yes, I measure portions (most of the time)! That's 4 oz. chicken, and 1/2 a cup of the risotto. I didn't measure the broccoli, just cooked one head of it and called it a meal.
