Today I have made:
1. Chocolate cupcakes, with chocolate frosting and decorated with candy corns.
2. Carrot cupcakes, with cream cheese frosting and decorated with mallow pumpkins.
3. Homemade caramels from scratch. I used a candy thermometer and everything. I poured the caramel over marshmallows, and this made them even gooier and yummier.
4. A "Red Hot" bundt cake. I have a cake recipe I made up--Bisquick, sugar, milk. I don't measure, I just dump and pour and stir. I added cinnamon and cinnamon imperial candies. I iced it with icing made from powdered sugar and milk.
5. A lemon cake, using the same Bisquick "recipe," but adding lemon extract. I iced it with the same icing, just adding lemon extract to that, too.
Tomorrow I will make:
1. Scones
2. Brownies (with chocolate chips and marshmallows)
3. Pumpkin cream cheese muffins
4. More caramels.
Why am I doing all of this baking (the woman who fought so hard to lose 60 pounds?). Well, this weekend is the weekend of my mom's craft faire. There is always a bake sale--the proceeds from that go to various local charities (including a cat rescue group!). So I always contribute something, and this year, having so much time on my hands, I will contribute even more. That way I get the joy of baking without eating it all...so far, I've had one bit of caramel, and I have no regrets.
